Oat bran muffins (Makes 10 muffins)
(A)
2 cups oat bran
2 tsp baking powder
1/4 cup brown sugar (firmly packed)
1/4 teaspoon salt
1/4 cup raisins
1 teaspoon cinnamon (optional)
(B)
2 egg whites, slightly beaten
2 tablespoons soybean or canola oil
4 tbsp honey
1 cup nonfat milk
Preheat oven to 200 C .
Combine (A).
Add (b) to mixtures and blend.
Fill prepared muffin cups and bake 17 minutes or until golden brown.
