材料4位用)
白朱古力…………….110g
espresso coffee……4/5杯
tia maria香甜烈酒….適量
可可粉(蛋糕面用)…..適量
黑朱古力(蛋糕面用)…刨片
海綿蛋糕
白砂糖………………..110g
雞蛋……………………4隻
牛油……………………50g
麵粉……………………85g
可可粉…………………30g
餡料
mascarpone…………500g
糖………………………70g
蛋黃……………………2隻
via santo意大利甜酒..100ml
做法:
1先做海綿蛋糕…焗爐隕熱至350度F,..將砂糖及雞蛋攪拌至起泡…加入巳溶解的牛油,再灑入麵粉及可可粉,充分攪拌後倒入一個做瑞士卷的鍚紙盤中, 放入巳預熱好的焗爐焗10分鐘,取出放涼備用.
2將mascarpone,砂糖,蛋黃各vin santo放入大碗攪至滑身
3把各樣材料混合, 先將海綿蛋糕壓在模中,淋上咖啡,tia maria香甜烈酒舛溶解了的白朱古力,再放入餡料, 灑上可可粉, 最後用刀將朱古力刨薄片舖於蛋糕面便可.

ingredients:
110G good-quality white chocolate, melted
4/5 shots espresso coffee
appropriate portion of tai maria liqueur
appropriate portion of cocoa powder for dusting
1 bar of dark chocolate for shaving
genoese sponge
110g caster suger
4 eggs
50g melted butter
85g plain flour
30g good-quality cocoa powder
filling
500g mascarpone cheese
70g caster sugar
2 egg yolks
100ml vin santo
method
1 frist make the sponge. Preheat the oven to 350F. Whisk the sugar and eggs until they are at ribbon stage. Fold in the melted butter, then fold in the shifted flour and cocoa. Pour the mixture into a lined swiss roll tin and bake in the preheated oven at for 10 mins. remove the sponge from the oven when it is done and leave to cool.
2 to make the filling, put the mascarpone, suger, egg yolks and vin santo into a bowl and mix until smooth
3 to assemble the tiramisu, break up the sponge and press it into the bottom of a shallow disk. Dizzie over the coffee, tia marria and white chocolate. Spoon over the mascarpone filling, then dust liberally with cocoa. Using a large knife, scrape the chocolate towards you to make shaving and arrange these delicately over the top.
