Mars I made a banana coconut cake with coconut honey topping last night which is good and would like to share the recipe with anyone who loves banana cake
¾ cup coconut
90g butter
2 eggs
½ sugar
¾ self raising flour
¼ cup plain flour
t teaspoon baking soda
¼ cup milk
1 cup mashed banana (3 bananas)
Coconut Honey Topping (optional)
30 g butter
2 tablespoon honey
1 cup shredded coconut
Please butter and honey in saucepan heat until butter is melted add coconut stir for 5 mins or until lightly browned.
1) toast coconut on oven tray in 325 F oven for about 5 minutes – cool
2) cream butter & sugar until light & fluffy, beat eggs one at a time until combined
3) stir in half the combined sifted dry ingredients and toasted coconut with half the combined milk and banana, then stir in remaining dry and wet mixture stir until smooth.
4) pour into a greased 15 cm x 25cm loaf pan and bake for 30 minutes 160-180C then spread topping and bake for further 30 minutes
