Chocolate Cheesecake – Martha Stewart Living
Serve 8-10, 9” cake pan
1 cup finely ground chocolate wafer cookies (5 ounces about 22 cookies)
4 tablespoons unsalted butter melted
1 cup + 3 table spoon sugar
8 ounces bittersweet chocolate, chopped
3 pack cream cheese room temperature
Pinch of salt
3/4 cup sour cream, room temperature
3 tablespoon cocoa powder
2 teaspoons pure vanilla extract
3 large egg, room temperature
1. set oven to 350 F
2. Stir cookie crumb, butter and 3 tablespoons sugar in a bowl, pack it into a 9” pan and 1 inch of the side, bake for 10 mins and transfer to a wire rack to let it cool down. Set Oven too 300 F
3. Melt chocolate about 2 mins, let it cool
4. Add cream cheese into a bowl, using paddle and medium speed until fluffy, about 3 mins
5. turn to low speed add the remaining cup of sugar in a slow and steady stream
6. Add salt and mix until combine
7. Add sour cream, cocoa powder, vanilla extract and melt chocolate, mix until combine, add egg (don’t overmix)
8. Pour into the pan
9. Bake until set but slightly wobbly in center about 50-60 mins
10. cool it on the rack
11. refrigerate uncovered cheese cake for 6 hours or overnight
